I'm sure GW make some stand alone watch towers, but can't find them on their site, and I'm tempted to try picking some up and putting a spotlight in from a military modelling kit (if I can find one) to make lights for the bloodbowl pitch.
Can anyone confirm they do one and give a link if poss?

You may be thinking about the Seige towers that they made for Warhammer Seige a few years ago. Haven't seen any in a while. I think that White Dwarf has had instructions on how to construct watch towers about a year or so ago.

Popped into a GW store today, and I think I was confused by the Mighty Fortress Towers, so the quest is out there - I need websites that might have watchtower kits - ideally search tower kits.

I had a similar idea. Conclusion was, balsa wood would be cheapest and possibly easier to customise.
