Sheesh! Why do so many sculptors make a 3 dimensional figure, in a 2 dimensional pose?

Is it just to make casting easier?

Have they got something against sculpting anything coming out the front or out the back?

Short answer: Yes.

Long answer: The sculpted green needs to lay flat between the two halves of the rubber mould disc, when making the moulds from which the figure gets cast. If anything came out the front or back (or anywhere else that differed from the two dimensions in which they did sculpt), the mould will not work properly -- either the protruding detail will be destroyed and mismoulded (if it protrudes too far), or it will be moulded but will undercut the mould and damage when you try to separate the two mould halves and remove the cast figure. This is why some figures half to be cast in multiple parts. Without going the multi-part route, though, figures are going to be very 2-D and it will be very much for casting reasons.
