My choices are pretty simple - a new Runner (have 1, other 1 died), a new Blocker or an Apothecary (and use a journeyman Blocker).
I believe the common theory would be take the Runner but am going up against Nurgle next which is why I'm considering going for the Apothecary instead. However, that may result in me simply giving him 50k in inducements for his own Apoth. Not that I'm looking to kill off his guys as much as I'm worried about protecting my own.
Any advice would be appreciated.

Don't bother with a Blocker right now, Dwarf Journeymen are rock solid.
How developed/valuable are your remaining players? Assuming there are players you'd rather not lose to a freak death/stat bust, I'd be leaning towards an apoth. Spare Runner after that.

Admittedly this is only 3rd game and only 2 of my players have leveled up, but both are AV8 (1 Trollslayer, 1 Runner).

Following up on this, I ended up taking the apothecary. Game went fine, had 2 players take casualties that were minor so didn't use apoth. Last turn of game my Runner goes down and I roll a 58 (smashed something, -1 ST). I use apoth, re-roll.....a 58. Unbelievable. Thanks Nuffle.
